Day 12: Fly into Perth and check into your new home, Alex Hotel in cultured Northbridge. Have dinner at the hotel-owned Italian restaurant, Shadow Wine Bar & Dining Room, just behind Alex Hotel. Get a feel for Perth as you cruise down the Swan River taking in the parks, skyscrapers and even 40 vineyards in the Swan Valley.

Day 3–4: Continue the food theme with a trip to Perth Farmers’ Market. You’ll be hungry after admiring all the local produce, so have lunch at Print Hall, whose four-level space honours modern Australian cuisine and the building’s history as a print hall. Walk off yesterday’s meals in Bold Park, an area of urban bushland close to the CBD. The park provides a home to an array of birds, reptiles, amphibians and invertebrates.

Day 5: Hop on a plane to Adelaide (flight time: just under three hours) and enjoy the city with a relaxed picnic in Rymill Park, which hosts festivals and concerts throughout the year. 

Day 67: Go on a day trip to the Barossa Valley (an hour away by car), ticking off some of the big-name wineries and cellar doors, but come back to Adelaide for dinner at Andre’s Cucina & Polenta Bar, which serves up dazzling Italian dishes. Back in Adelaide explore the laneways for great dining and stroll the galleries of North Terrace.

Day 8–9: When you’ve digested, catch a flight to Melbourne (flight time: one hour, 20 minutes). On the weekend, visit hipster-hangout Fitzroy for the Rose St. Artists’ Market; have a memorable meal at Tonka, which serves up ambitious Indian fusion food. Bed down at The Cullen, which pays tribute to the late Australian artist, Adam Cullen.

Day 10–11: Appreciate Victoria’s colourful countryside with a trip to the Yarra Valley, around an hour-and-a-half away from Melbourne by car. Unsurprisingly, the region boasts some impressive wineries and restaurants. Back in Melbourne, have dinner at Vue de Monde, Shannon Bennett’s 55th-floor, top-tier restaurant.

Day 12–13: On your last day escape the city and catch the tram to St Kilda beach to wander down the esplanade and lunch at one of the cafes on Fitzroy Street. Catch your flight with Singapore Airlines from Melbourne back to London.
